But what makes an apple red and the sky blue?

Color is a reflection of light.

Our eyes see a color based on which light wave is reflected.

Lighting conditions also affect how you view a color.

Natural light or daylight produces a brighter more vivid hue.

Incandescent lighting provides warm yellow light which intensifies warm colors and mutes cool complementary hues.

Fluorescent light tends to cast a greenish light that flattens warmer colors.

As you can see, light plays a significant role in how you view, and ultimately choose color. That's why it's a good idea to preview a color before painting an entire room.
